I think the reason they did Protoss and Terran first is that low-poly smoothshinyclean 3d models look better with vehicles, buildings, and other mechanical objects. Starcraft's low-res attempt at realism gave things a gritty, dirty look, and required you to fill in the details with your imagination. You can't really see what a hydralisk or mutalisk would really look like from the sprite art, so your brain takes the gross movements of the simple animation and fills in the details from the badass close-up promotional and cutscene art. Starcraft 2 runs at high-res, and it doesn't look like they're going out of their way to make things look gritty. Even if they did, the higher the resolution, the more jarring it is that every unit of the same type looks identical. If they try to make them look gritty and dirty, then every bit of grit and dirt will be in the same place on each unit, and your mind will reject it.

Well, they could always do the same thing to detail textures that they do to terrain textures in the editor, which is to use sets of textures having individual textures picked at random.

Good point, maybe Blizzard has delayed showing the Zerg because the more advanced features of the graphics engine weren't finished.
